Ingredients

  • 3 apples – peeled and sliced
  • 2 eggs
  • 200 g – 1½ cups plain flour
  • 100 g – 7 tbsp butter – melted
  • 180 g – 1 cup sugar
  • 150 ml – ⅔ cup milk
  • zest of 1 lemon
  • 1 pinch of salt
  • tsp baking powder
  • 1 tsp vanilla extract
  • icing sugar – for dusting

Instructions

  1. Grease and flour a 22 cm – 9 inch springform pan, then set it aside.

  2. Beat the eggs and sugar until pale and fluffy.
  3. Add the melted butter and continue beating.
  4. Gradually pour in the milk and flour, continuing to beat until smooth.
  5. Stir in the baking powder, salt, lemon zest, and vanilla extract until just combined.
  6. Gently fold in the apple slices, then pour the batter into the prepared springform pan.
  7. Bake in a preheated oven at 180°C – 355°F for 45 minutes.
  8. Let the cake cool completely, then unmould it, dust with icing sugar, and serve.
