Watermelon and Strawberry Salad with Ginger and Lime Syrup Recipe

Crisp watermelon, ripe strawberries, and fresh mint turn this Watermelon and Strawberry Salad into a colourful dish finished with homemade ginger and lime syrup.

Ingredients

Ginger and Lime Syrup

  • 70 g – ⅓ cup sugar
  • 70 ml – ⅓ cup water
  • 1 tsp – fresh ginger – grated
  • juice of ½ lime

Watermelon and Strawberry Salad

  • ½ watermelon
  • 15 – 20 strawberries – hulled
  • zest of 1 lime
  • mint leaves

Instructions

Prepare the Ginger and Lime Syrup

  1. Combine the sugar, water, grated fresh ginger, and lime juice in a saucepan. Heat over medium until the sugar dissolves completely.
  2. Remove from the heat. Let the syrup cool completely, then strain it into a small bowl or jug and set aside.

Assemble the Watermelon and Strawberry Salad

  1. Cut the watermelon into bite-size cubes and place them in a large serving bowl.
  2. Hull and halve the strawberries, then add them to the watermelon.
  3. Add the grated lime zest and mint leaves.
  4. Pour the ginger and lime syrup over the fruit. Toss gently to coat, then refrigerate for 10–15 minutes.
  5. Serve chilled.
