QUICK AND EASY BLUEBERRY TRIFLE

Blueberry Trifle

This is a very easy dessert recipe that can be prepared in a matter of minutes. The thing is it looks very nice and elaborate, so it will impress anyone you serve it to. Doesn’t that sound like the perfect dessert? After having prepared an entree, a main and a side dish and having spent a good part of your day in the kitchen… what’s better than whipping up your dessert in a jiffy? If you want to (and have the time) you could even make the custard yourself and if blueberries are not in season, you can use frozen blueberries too. Give this trifle a try and you won’t be disappointed.

 

Ingredients for 4 persons:
200 gms – 7 oz. blueberries
2 tbsp sugar
2 tbsp rum
300 gms – 10.5 oz. thick vanilla custard
5 tbsp water
10 savoiardi (lady fingers)

Wash the blueberries and put them in a small pot together with the sugar and 1 tbsp of water.

Cook them for a couple of minutes, add the rum and burn the alcohol off by increasing the flame. Then put the fire off.

Separate the blueberries from the cooking liquid, put the liquid in a bowl and keep the blueberries aside to cool down.

Add the water to the liquid in the bowl, mix, and keep aside.

Take 4 serving glasses and put a tbsp of thick custard in each of them.

Then take 1 savoiardo and dip it in the liquid until it is soaked and soft, but not mushy. Cut the savoiardo in 2 or 3 pieces depending on the size of your glass.

Put a layer of savoiardi on top of the custard, then add another layer of custard, a tsp of blueberries, a layer of savoiardi etc. until you get to the top.

Finish with a layer of custard, top it with a spoonful of blueberries and drizzle any accumulated juices from the blueberries on the top.

Serve cold.

    These look delicious! They look perfect for sitting by the pool dangling your feet in the water! I’ve been wanting to do something similar with strawberries and a white wine.

    What can I use instead of savoiardi? Sometimes I really envy that you’re able to get all these yummy food there. I’ve been searching for savoiardi and graham biscuits here but couldn’t find them. 🙁

      Sorry Lyn, I thought I had already answered… but it looks like I didn’t!!! LOL You can easily substitute savoiardi with sponge cake (even store bought one)! Hopefully that is easier to find in SG! 🙂 Let me know! <3
