CHICKEN COTOLETTE WITH CHEESE AND A SHOWER OF AWARDS

Chicken Cotolette with Cheese

This is the chicken version of my cotolette recipe with a couple of differences.  In this case I coat the chicken with flour before putting it in the egg wash and crumbing it.  And, above all, I add cheese to it.  It is a very easy dish that your kids and you will love.  This is another easy recipe for a mid week dinner.  Serve it with a simple tomato salad.

Ingredients for 4 persons:
4 thin chicken breasts steaks (the ones used for schnitzels)
1 egg
Flour
Breadcrumbs
Salt
Cheese, sliced (I used Tasty cheese)

Start by flattening the meat: each cotoletta has to be about 0.5 cm thick.  Keep them aside.

Beat the egg in a bowl and add salt to it.  Put the flour and breadcrumbs in 2 separate plates.

Coat each chicken steak with flour, dip them in the egg and then coat them well with breadcrumbs, pressing with your palm so the crumbs stick well to your cotoletta.

Shallow fry them in hot vegetable oil.

When the meat is cooked, put it in an oven proof dish in one layer, put some cheese on each cotoletta and put them in the oven for a couple of minutes, so that the cheese melts.

Serve warm with a simple tomato salad.

On another note… this morning I woke up to 2 wonderful surprises.  I received awards from 2 of the bloggers I admire the most and I have been constantly following since I started blogging!  I feel so blessed to be appreciated by such lovely people and it makes blogging about my passion for food so much more worth the effort!

To follow the tradition… here are 7 things you still don’t know about me:

1.  I love coffee… it is my only real “addiction”.  And when I say coffee, I mean espresso.  I actually have it macchiato and my day rarely starts off without my cup of coffee.

2.   I love all kinds of cuisines, but I am lately craving for a good French meal.  I used to visit France regularly as a child and I have kind of grown up on pain au chocolat, mousse au chocolat, baguette with paté, all sorts of cheese (especially goat’s cheese), crêpes and all the other French delicacies you can think of…

3.  History and geography have always been my favourite subjects in school.  I just find reading about the past fascinating and my love for geography is very likely connected to my love for travelling.

4.  I have travelled quite a bit and (besides Italy and Australia), for me the most amazing places I have visited so far have been The Alhambra (Granada – Spain), the Norwegian Fjords (Norway), Finnish Lapland (Finland), Goa (India), the Mayan ruins of Central America (Mexico and Guatemala) and the coral reef (the best for me were in Belize, Maldives and Fiji).  But I always say that my best trip is the one I’ll go on “next”!

5.  The sweet ingredient I enjoy cooking with the most is dark chocolate (not too sweet and very versatile), while the savory ingredient would have to be cheese.

6.  When I dine out I very rarely order fish.  I almost always have meat as a main dish, either beef or lamb.

7.  My 3 favorite books ever are “One Hundred Years of Solitude” by Garcia Marquez, “The House of the Spirits” by Isabel Allende and “A Suitable Boy” by Vikram Seth.  Have you ever read any of them?

    This is actually schnitzel with a slice of cheese on top. Yummy. But I’d be interested in knowing what the difference is between a cotolette and a schnitzel.

      Cotoletta is the Italian name for schnitzel. 🙂

    Hi Manu! So sorry for my late response after you left your note regarding awards. Today was a bit chaotic… Well first of all, congrats on your awards. Everyone including myself agrees that you totally deserve these awards. And thank you for passing me them too. I was more happy that you said you enjoyed reading my blog – that means a lot to me. 🙂 When I received email about your note on awards, I quickly came to this post and saw your cotolette, and guess what, I even cooked this dish with sliced pork. Japanese have similar dish (probably influenced by Italian obviously) and I mixed Italian herbs in Panko since we were having pasta tonight. Thanks for helping me figure out my dinner menu. 😉 See how inspiring you are? Haha. Thanks again for awards!
