These Mint Chicken Pita Pockets are another low-fat lunch idea I developed when I was having gallstone issues. I made it with fat-free mayo, but you can use your favourite brand/type. I used my recipe for Poached Chicken in a Mint Sauce to fill these pita pockets and I also added some lettuce and tomatoes to the mix. The final result is tasty, filling and satisfying… but it’s still healthy and low fat! I think the mint sets this sandwich apart from many others: it adds a deliciously refreshing flavour to the whole thing. I think it is perfect for a light lunch or picnic! Enjoy!
Mint Chicken Pita Pockets
Mint Chicken Pita Pockets - a refreshing recipe for pita pockets filled with poached chicken in a mint sauce, lettuce and tomato.
Ingredients
- 2 Pita Pockets I used low fat pita
- 130 gms – 4.5 oz. mint chicken make ¼ of this recipe
- ½ cup lettuce shredded
- ½ big tomato sliced
Instructions

Warm pita pockets following packet instructions and cut in half.

Pile the mint chicken into the pita pockets, along with tomato slices and lettuce.

Serve immediately.
