After a very Italian recipe, today I am back with something from my new country. I have discovered these amazing cookies only recently and I simply adore them. Melting Moments do really melt in your mouth, the moment you take a bite! They are similar to shortbread, but they are even more buttery and delicate. They are often sandwiched together with buttercream and I chose to make mine Passion fruit flavoured. I love the combination of the sweet cookies and slight tartness of the filling: pure bliss. These cookies are a classic of Australian cooking and I love to have them with a nice hot cuppa. Enjoy!

Melting Moments with Passionfruit Buttercream - Australian cookies that literally melt in your mouth!
Ingredients
Melting Moments
- 180 gms – 1 ½ stick of butter softened
- 60 gms – ½ cup icing sugar sifted
- 60 gms – ½ cup custard powder
- 180 gms – 1 ½ cup all-purpose flour
- 1 tsp baking powder
Passion fruit Buttercream
- 100 gms – 7 tbsp butter softened
- 120 gms – 1 cup icing sugar sifted
- 5 tbsp passion fruit pulp
- Icing sugar for dusting optional
Instructions

Put the softened butter in the bowl of an electric mixer fitted with the paddle attachment and beat it for 2 minutes. Add the custard powder and keep beating.

Sift in the flour and baking powder and keep beating.

Add the sugar and beat well.

Roll this mixture into 12 balls of approximately 40 grams - 1 1/2 oz. each and press them down with a fork.

Bake them in a pre-heated oven at 180°C – 355°F for 16-18 minutes, then let them cool down on the tray for 5 minutes before transferring them onto a rack to cool down completely.

To make the buttercream, beat the softened butter with an electric mixer fitted with a paddle attachment for a few minutes and then incorporate the icing sugar and passion fruit pulp. Mix well.

Pipe the passion fruit buttercream on half of the cookies and put the remaining cookies on the top, like a sandwich and serve.

What is custard powder and what is it used for ?

It is used for flavoring and for making the cookies more crumbly.
