Pear is one of my favourite fruits. I love the fact that it comes in many different varieties and that every season has its own special pear. I love that they are naturally sweet and refreshing. Even though I like them so much, I had never made ice cream with them. The other day I saw I had some cream in the fridge that HAD to be used and I was craving some fruit based ice cream! The only fruits I had at home were pears… and that is how this ice cream came about. I am so happy that the cream had to be used!!! This ice cream is definitely a winner: it was ever so creamy even without using any eggs. The best thing is, it was very easy to make… just blend the ingredients in a mixer and pour them in your ice cream maker. That’s it! You know me though… I HAD to add something to it, so I served it in a pear wafer basket and I drizzled it with some warm Blue Persian salt caramel sauce. One word: A M A Z I N G! Try it and let me know!
For the Pear Ice Cream
Ingredients:
160 ml – 5.5 oz. milk
240 ml – 1 cup cream
2 pears (medium) – skinned, pitted and chopped
1 tbsp lemon juice
140 gms – 5 oz. sugar (to taste – depending on how sweet the pears are)
Put all the ingredients in a mixer and blend well. Churn for 25 – 30 minutes in an ice cream maker or according to the manufacturer’s instructions.
You can serve it immediately or transfer it into a container (in this case, cover it with cling wrap and make sure it touches the ice cream, so no air can pass through).
For the Pear Wafers
Ingredients:
1 pear
200 gms – 1 cup sugar
Thinly slice the pear with a mandolin (1). Put the sugar in a plate and dip the slices of pear in it on both sides (2-3). Coat well. Put the sugared slices on a tray lined with baking paper (4). Cover them with another sheet of baking paper and place a silicone mat on the top (5), to preventing from curling up in the oven. Bake in a pre heated oven at 120°C – 250°F for about an hour or until the slices have turned dry and crisp. When ready, peel the wafers off the baking paper and transfer them to a wire rack to cool and harden (6).
If you want to make baskets, put a small bowl upside down and cover it with some baking paper, then place the wafers around it and let them cool and harden before taking them out.
To assemble
Serve the pear ice cream in the pear wafer baskets. Drizzle with some warm Blue Persian salt caramel and decorate with another pear wafer. Serve immediately. You could also serve it along with some pear grappa!
