PEANUT BUTTER CHOCOLATE CHIP COOKIES

Peanut Butter Chocolate Chip Cookies

It is time again for the “Secret recipe club” reveal!  I am sure you all know what the club is about, but for the few of you who still don’t know about it, here goes a brief explanation.  It is a great concept… each month you are assigned a participating food blogger to make a recipe from and in turn someone else will be assigned your blog.  All you have to do is choose a recipe, make it and blog about it on the specified date.  The only rule is to keep it a secret!  If you are interested in learning more, or want to join the club, please visit the Secret recipe club website.
The blog I got assigned this month is Danielle’s A Day in the Life.  She is a mum of 2 gorgeous little boys: Colin and Sawyer… and being a mum to 2 little girls myself, I can totally relate to her when she says “Whoever said being a parent was easy didn’t have children of their own.”!!!  So true!  She has a beautiful blog where she wites about all her hobbies and about her life and family.  And off course, it is not short of yummy recipes!  Make sure to check it out!  While browsing through Danielle’s site I got immediately hooked to one particular recipe: Peanut Butter Chocolate Chip Cookies.  Why??  Well, the reason is quite simple.  Unlike many of you, I haven’t been brought up on peanut butter.  I had actually never tasted it until a few years ago… and even then, I was not too impressed by it when I first tried it!  You see, I was expecting something sweet… so I got a bit disappointed.  A few weeks ago, I found myself buying a jar of peanut butter to make home-made Hoisin Sauce for the Moo Shu recipe I posted.  I used only a little bit and then had the remaining jar sitting in my pantry waiting to be used.  But how????  Well… this sounded like the perfect recipe to put that peanut butter to use!  And I am really happy I chose it.  I must admit that I usually prefer crunchy cookies and these are quite the opposite: they are really chewy and crumbly in texture.  But after having one, I found myself reaching for a second and… I would have finished the whole batch if I hadn’t forced myself to stop!  They are that good!!!!! 🙂  Thank you so much for sharing such a fantastic recipe Danielle!  Please, make sure you drop by Danielle at A Day in the Life and check out her beautiful site!

Recipe adapted from Danielle at A Day in the Life

Ingredients: (makes about 25)
115 gms – ½ cup butter
50 gms – ¼ cup sugar
100 gms – ½ cup brown sugar
1 egg
1 tsp vanilla
185 gms – ¾ cup almond butter (I used smooth peanut butter)
125 gms – 1 cup flour
1 tsp baking powder
Pinch of salt
225 gms – 1 ¼ cups chocolate chips (I used bittersweet chocolate chips)

Cream the butter and sugar together in the bowl of an electric mixer with a paddle attachment (1) until light and fluffy (2).  Add the egg, vanilla, and peanut butter (3).  Beat until smooth (4).  Mix in the flour, baking powder and salt (5-6).  Stir in the chocolate chips (7).  Drop spoonfuls of dough onto a cookie sheet (8).

Bake them in a preheated oven at 190ºC – 375ºF for 10-12 minutes, or until lightly browned.

Peanut Butter Chocolate Chip Cookies

Store the cookies in an airtight container at room temperature.

    I grew up with peanut butter, but I still only like it in cookies 🙂 And these look wonderful…glad you gave pb another shot! And I’m so glad we’re in Group C together!

    Beautiful photos for these cookies. And with a description of chewy and crumbly I’m sold. PB cookies have been my favorite since I was introduced to them as a little girl when I visited my grandmother at her farm in Minnesota. I’ve never stopped loving them or collecting PB cookie recipes. Nicely done!

    I totally take for granted that everyone has tried peanut butter. I’m glad you found a use for the leftovers. It’s also really good to make a peanut sauce for Thai cooking. The photos, as always are gorgeous.

    Manu….these are gorgeous cookies! I grew up on peanut butter and can eat it in all forms. But what better way than a cookie with chocolate chips! I’m looking forward to trying these! : )

    Finally we baked our very first cookies last week and I chose to try it out with peanut butter cookie premix then another batch from a recipe. We love the nice peanut aroma and semi-sweet taste of the cookies! 😉

    I remember that my mother prepared to us sandwich with peanut butter and Nutella, terrific combination. Now my son likes peanut butter, as well as I do, no body else at home likes it, what a surprise. But I ever try to make cookies with it, maybe in that way all the family can enjoy it.
