POTATO GNOCCHI WITH GORGONZOLA

Potato Gnocchi with Gorgonzola

This is my favourite sauce for gnocchi. I love all gnocchi served with this sauce: potato, ricotta, flour gnocchi… they all taste fantastic with this sauce. Do you think it might have something to do with the fact that gorgonzola is actually my all time favourite cheese?! 😉 Well, anyhow it is also a very easy sauce and you can litterally have it ready in less than 5 minutes. So, that’s another reason to love it, right? Here you have it… the creamiest and most sinful dish I have ever cooked!

Ingredients (for 4 people):
200 ml – 6.8 oz. cream
150 gms – 5.3 oz. gorgonzola dolce (the softer and milder one)
Salt
Pepper
Parmigiano Reggiano, thinly grated
A few pistachios to serve

1 full dose of potato gnocchi as per MsM’s recipe.

Put the cream and gorgonzola in a saucepan and let it cook on a slow fire until the cheese melts and the sauce slightly thickens. Season with salt and pepper and keep aside.

Cook the potato gnocchi as per the instructions that you find here.  Mix them well with the sauce in the pan.  Add a handful of thinly grated Parmigiano Reggiano and mix until well combined.

Potato Gnocchi with Gorgonzola

Serve hot with a few pistachios for a little crunch and some more thinly grated Parmigiano Reggiano on the top.

    This looks so delicious and comforting! I have to admit gorgonzola is not my favorite, but I should try the gorgonzola dolce. Maybe I’ll like the milder version better. I bet this would be delicious with other cheeses too.

    OMG no you didn’t! I’ve been fawning over this recipe that just popped up on Epicurious this month for “Gnocchi Gratin with Gogonzola Dolce”…same ingredients minus the ginger…did you by any chance take a glance at the new BonApettit or Gourmet mag this month? lol. This looks amazing and I can’t wait to try it!

    I totally agree, Manu. Gorgonzola is the best tasting cheese EVER. And our favourite sauce for gnocchi which looks so tender and fluffy! I may have to splurge on the weekend and make this, I haven’t had gnocchi for a long time!

    I’m with you, Gorgonzola is one of my favorities blue cheese, it’s not too stronge and gives to your mouth a little bit of spicy. Make a cream with ti is absolutly a wonderful idea.

    Hi Manu, this looks like an Italian comfort food. Homemade gnocchi with gorgonzola. The pistachio on top will give a nice crunch and flavor to the creamy flavor.

    That certainly does looks sinful, but sinfully GOOD! I have never made gnocchi at home, but I know I should. This must be hundreds of times better than store bought, which I find too dense. I wish you lived next to me, because I would just pop over for dinner…haha.
