Today it’s back to basics, with an Italian classic recipe… but with a twist. Ham and peas are a very common pairing and Italians love to use this combination in a pasta sauce. I love it too and it reminds me of when I was a child and I would often ask my mum to make it for me! I decided to slightly change the original recipe and use it for my Saffron Potato Gnocchi. The result was decadent, elegant, yet simple and easy to make. Pure comfort food that will conquer kids and adults alike. I know it conquered my family. Saffron Potato Gnocchi are normal home-made potato gnocchi with saffron added to the dough. This gives them both a nice yellow colour and a delicate saffron taste that goes very well with sauces like this one or with mushrooms and sausage. Try them and let me know what you think. Saffron Gnocchi with Ham and Peas
Saffron Gnocchi with Ham and Peas - a classic Italian dish with a twist!
Ingredients
- 1 batch Saffron Potato Gnocchi
- 2 tbsp onion chopped
- 2 tbsp extra virgin olive oil
- 4 tbsp ham chopped
- 2 cups peas fresh or frozen
- 200 ml – ¾ cup cream
- Salt to taste
- Parmigiano Reggiano finely grated – to serve
Instructions

Make the Saffron Potato Gnocchi as per my tutorial.

Put the chopped onion and extra virgin olive oil in a big pan and sauté it for a minute.

Add the ham and peas (if you are using frozen peas, there is no need to defrost them – if you are using fresh peas you will need to add a couple of tablespoons of water for them to cook). Stir and cook for 5 minutes or until the peas are soft.

Cook the gnocchi as per the instructions that you find here.

When cooked, add the gnocchi to the pan with the ham and pea sauce. Put the fire on and mix well for about 1 minute.

Serve immediately with some grated Parmigiano Reggiano on the top.
