SPAGHETTI WITH TUNA AND CAPSICUM

Spaghetti with tuna and capsicum

This is a very simple pasta dish.  I like it because it is really tasty, colourful and easy to prepare.  I usually make it when I do not have a lot of time, but feel like eating something flavoursome and healthy.  Try and make it as a mid week dinner, I am sure you will enjoy both the dish and the extra spare time you will have to spend relaxing with your family.  Also, if you haven’t done it yet, remember you can participate in my international giveaway for a chance to win a digital scale!

 

Ingredients for 4 persons:
1 red capsicum, cleaned and cut in thin strips
200 gms tinned tuna, preserved in olive oil
1 tbsp extra virgin olive oil
1 small onion, thinly sliced
4 tbsp tomato puree
1 tbsp green olives, chopped
1/2 tbsp capers, preserved in salt (washed)
Water
Salt to taste (add it only at the end as the ingredients are salty already)

400 gms spaghetti



Put the sliced onion, the tomato puree and the red capsicum strips in a pot.  Add half a glass of water, cover it and let it cook on a low fire until the capsicum is soft.

Add the extra virgin olive oil and cook uncovered on a medium fire for a couple of minutes.

Add the tuna, olives and capers.  Mix well and cook for 2 minutes.  Add salt to taste (if required) and a little water if the sauce is too thick.

In the meantime, cook spaghetti following the steps on How to cook pasta “al dente” in the Techniques page of this site.  When the pasta is ready, drain it and serve it with the tuna and capsicum sauce on the top.  Mix well and enjoy it warm.
