Are you ready for New Year’s Eve? I’m still adjusting the menu, I always do! Right up until a few hours before the guests arrive, I usually end up changing something here or there. Before all the cooking begins, I like to start the evening with a festive cocktail.
This Sweet Dreams Cocktail is creamy and smooth. It brings together three of my favourite liqueurs, Bailey’s, Kahlua, and Malibu. This drink is like having dessert in a glass, a small tradition we keep every New Year’s Eve.
Here’s to another year of good food, good company, and sweet memories. Cin cin!

- Serves as the perfect after-dinner drink when you want something sweet.

Key Ingredients for Sweet Dreams Cocktail
Bailey’s Irish Cream
This classic Irish liqueur gives the cocktail its creamy texture and smooth sweetness. It balances the strong coffee flavour from the Kahlua and adds richness.
Kahlua
Kahlua adds depth and warmth. Its coffee undertones pair perfectly with the cream and coconut, giving the drink that slightly bittersweet edge.
Malibu
The coconut rum adds a tropical twist. It lightens the drink and makes it taste like a holiday, even if you’re celebrating in winter.
Garnishes
A layer of whipped cream, cocoa powder, and coconut shavings gives the cocktail a festive look. The cocoa brings a light contrast to the Malibu’s creamy sweetness.

Frequently Asked Questions
Yes, you can. Coconut cream gives the cocktail a stronger tropical flavour and a thicker consistency. It pairs especially well with the Malibu and adds a touch of natural sweetness.
You can blend the liqueurs and cream a few hours in advance and keep the mixture covered in the fridge. Give it a gentle stir before pouring, then add the whipped cream, cocoa, and coconut only when you’re ready to serve so the toppings stay fresh.
No problem! You can shake the ingredients with a little ice in a cocktail shaker or mix them well in a jug. Strain into the glass before adding the whipped cream and garnish.
You can prepare a mocktail version by mixing coffee syrup, coconut milk, and a few drops of vanilla essence. It won’t taste the same as the original, but it’s a great alternative for anyone who prefers to skip alcohol.
A Martini glass looks elegant and suits the creamy texture of this cocktail. If you’re serving it after dinner, a small dessert glass or tumbler also works well and makes it easier to enjoy as a treat.
Extra Help from the Kitchen
Use Chilled Ingredients – Keep the liqueurs and cream in the fridge before mixing. Starting with cold liquids helps the cocktail blend smoothly and keeps it fresh without needing ice.
Blend Briefly – Blend only until the mixture looks uniform. Over-blending can cause too much foam and change the texture of the drink.
Adjust Creaminess – For a lighter texture, use half-and-half instead of fresh cream. For a richer result, use thickened cream. Both blend well with the liqueurs.

Variations and Twists
Chocolate Lovers’ Dream – Add 1 tablespoon of chocolate syrup before blending. The chocolate deepens the flavour and turns the cocktail into a dessert-style drink that feels like an adult milkshake. It’s a perfect option for after dinner.
Mint Kiss – Add a small dash of crème de menthe for a cool, refreshing flavour. The mint balances the richness of the cream and adds a clean finish, ideal for serving after a big meal.
Caramel Delight – Drizzle caramel sauce over the whipped cream for extra sweetness and a hint of golden colour. The caramel complements the Bailey’s and the coffee flavours from the Kahlua perfectly.
Tia Maria Twist – Use Tia Maria in place of Kahlua for a more intense coffee flavour. This version is slightly stronger and less sweet, great for those who prefer a sharper finish.
Frozen Version – Blend all the ingredients with ice until smooth. The result is a creamy frozen cocktail that’s perfect for warm summer days or outdoor gatherings. Serve it in chilled glasses for the best texture.
Storage and Shelf Life
This cocktail is best enjoyed fresh, soon after blending. If you need to prepare it ahead of time, you can mix the Bailey’s, Kahlua, Malibu, and cream up to 24 hours in advance and keep it covered in the fridge.
Stir well before serving, then add the whipped cream, cocoa, and coconut only at the last moment. It is not suitable for freezing, as the cream will separate once thawed.

I think if I had a few of these before the guests arrive I’d hang a sign on the door that said, “Nobody Home”. What a delightful drink!
I haven’t finalised my menu for tomorrow night yet but I’m very close. I just saw some 3 ingredient bacon stuffed mushrooms from Joy the Baker that might make the list. 🙂

Sweet dreams for sure from a lovely taste of the tropics. I might need to mix one of these once I’m home from the New Years Celebration
