I know I don’t even enough pasta recipes on the blog… and that’s such a pity! So, I decided to fix it and I am planning a little series about quick, simple and affordable pasta recipes. Who says that you need to go out of budget to have “real, healthy food”? Pasta usually makes everyone happy: the kids (and adults!) love it and you can have a delicious dinner ready in 20 minutes, any day. As the kids love it, it is also a great way to get them to eat vegetables. Today I will start this series with one of my favourite pasta recipes: Pasta with Fried Zucchini. It is really easy to make and it only requires a few ingredients, yet it tastes delicious. Serve it with a generous amount of finely grated Parmigiano Reggiano, which will make it creamy and add a delicious cheesey touch to it. Buon appetito!
Pasta with Fried Zucchini
Pasta with Fried Zucchini - a quick, easy and affordable dinner idea, ready in 20 minutes!
Ingredients
- 4 medium zucchini sliced
- 2/3 cup extra virgin olive oil
- Salt to taste
- 350 gms – 13 oz. long pasta Linguine or Spaghetti
- Parmigiano Reggiano finely grated, to serve
Instructions

Slice the zucchini and season with salt.

Make sure not to burn the oil. Reserve the oil in the frying pan.

Cook the pasta following the steps on How to cook pasta “al dente” in the Techniques page of this site.

Put the drained pasta in the frying pan where you fried the zucchini and mix it with the oil. Add the zucchini and mix well.

Serve immediately with a generous amount of finely grated Parmigiano Reggiano on the top.

Growing up in a poor neighbourhood (in Norway) i had an italian friend as closest neighbor. The best memories was when we was outside playing all day and i was invited to his place for a quik meal. Something simple as Spaghetti Aglio or Pasta with home made tomato sauce and some grated cheese over made me completely fall in love with italian food <3
It was just a very warm atmosphere at their home and i always felt like i was a part of their family, they always made me feel like that.
