It must be quite hot up in the Northern hemisphere. It’s the middle of winter here in Australia, but as it never really gets “cold” (not the cold I am used to anyway), I still like to have salads, especially for lunch. Today’s salad is a very easy one and it uses leftover chicken. I often make more of my Roast Brined Chicken so I can have leftovers to use in salads or tacos and this Shredded Chicken Salad with Ranch Dressing is another delicious idea on how to use up your chicken! As dressing, I used my Home-made Ranch Dressing instead of my usual vinaigrette, as I like something more creamy with a chicken salad. I hope you like it as much as I do! Enjoy!
Shredded Chicken Salad with Ranch Dressing
Shredded Chicken Salad with Ranch Dressing - a delicious and light summer meal.
Ingredients
- 250 gms – 2 cups shredded chicken I used leftovers from my Roast Brined Chicken, but rotisserie chicken would work just as well
- 10-12 cherry tomatoes
- 2 cups cos lettuce shredded
- 1 cup celery chopped
- 1 cup corn

Place all the ingredients in a serving bowl.

Dress with ranch dressing and serve immediately.
