Today’s recipe takes me back to my summers in Sicily where my aunt would often finish a delicious meal with these Pesche al Vino – aka Italian Peaches in Wine. She would skip the sugar to be completely honest, but the smell of the ripe peaches macerated in wine is still vivid in my mind. You can make these peaches with any wine – red, rosé and white, but I prefer mine with white wine. This is the perfect end of meal dish and it can easily substitute dessert as the wine becomes almost a peach flavoured syrup! These peaches and their wine must be served cold and they are so easy to make you will want to run into your kitchen and give them a go right now! They are my favourite summer dessert! Enjoy!

Pesche al Vino - the perfect end of meal dish that can easily substitute dessert as the wine becomes almost a peach flavoured syrup.
Ingredients
- 1 peach peeled and cut in wedges
- 1 tbsp sugar
- 80 ml – 1/3 cup white wine
Instructions

Wash the peaches, peel them, then cut them into wedges, discarding the pits

Add the white wine and allow the macerated peach wedges to macerate in the fridge for a further 60 minutes.

Put into a glass and serve.
