After sharing with you my recipe for Ranch Dressing, here is a fantastic idea on how to put it to good use: Deconstructed Chicken Taco Salad. Yes, you read that right. It’s like having tacos but in a salad form. And who doesn’t like tacos?? It’s got shredded chicken (I used my Roast Brined Chicken for this), avocado, cilantro, refreshing vegetables and a creamy dressing too. Plus, you have some crushed taco shells (you can even make your own) as a sort of “crostini”, to add some crunch and to make this salad a complete meal. I love to have it for lunch as it is light, yet satisfying! ¡Disfrútenlo!
Deconstructed Chicken Taco Salad
Deconstructed Chicken Taco Salad - just like having tacos but in a salad form!
Ingredients
- 250 gms – 2 cups shredded chicken I used leftovers from my Roast Brined Chicken, but rotisserie chicken would work just as well
- 1 avocado chopped
- 15 cherry tomatoes halved
- 2 cups cos lettuce
- ¼ red onion sliced
- 1 cup corn
- 1 red chilly sliced
- Cilantro
- Crushed or home-made taco shells
- Ranch dressing
- Lime wedges to serve
Instructions

In a bowl, mix together the shredded chicken, avocado, tomatoes, cos lettuce, red onion, corn, red chilly, cilantro and crushed taco shells.

Drizzle with the ranch dressing.

Serve immediately with lime wedges.
