In my latest post, I shared with you a tutorial on how to cook Quinoa. Today I will show you how to make a delicious Asian Quinoa salad with it.
Quinoa is a great alternative to other grains such as rice or couscous, and it tastes so good. This power-packed superfood has a lovely neutral flavour, with earthy undertones, almost nutty, that makes it the perfect base for all sorts of salads.
This simple and fast Asian inspired salad is nutritious, tasty and perfect for both lunch and dinner. It also makes for a great lunchbox alternative, especially if you add your choice of protein to it (like grilled chicken or a poached egg) to make it a balanced meal. This recipe is naturally gluten-free and low fodmap, so it’s also great for people with digestive issues.

Asian Quinoa Salad
Ingredients
Salad
- 195 gms – 1 cup quinoa cooked in 1 ¾ cups of water
- 225 gms – 1½ cups red diced
- 245 gms – 1½ cups Lebanese cucumbers diced
- 180 gms – 1½ cups carrot grated
- ½ cup fresh mint chopped
- ½ cup fresh coriander chopped
Dressing
- 4 tbsp lemon juice
- 1 ½ tbsp fish sauce
- 1 tsp sugar
- 2 tsp ginger grated
- 2 tsp sesame oil
- Chopped fresh chilli optional
Instructions

Cook the quinoa according to the instructions in this tutorial. Let it cool

To prepare the dressing, put all the ingredients in a small jar. Close it with a tight lid and shake well.

When the quinoa is cold, add the chopped vegetables and herbs to it and stir to combine.

Add the dressing and mix well. Serve immediately.
