Today I want to share with you a quick side dish recipe: Buttered Potatoes. I often make these potatoes instead of mash when I don’t have a lot of time. They taste delicious and absolve the same purpose of mash: to soak up all the yummy sauce or gravy of the dish they accompany. And they are ready in less than 10 minutes! You can’t beat that, can you? I like to cook these potatoes in the microwave, to speed things up, but you could even boil them, if you prefer. They make a fantastic side dish for a busy night!

Ingredients
- 12 small red potatoes washed
- 40 gms – 3 tbsp butter
- 2 tbsp parsley chopped
- Salt and pepper to taste
Instructions

Put the potatoes in a microwave safe container with very little water. Close it with its lid and microwave the potatoes until cooked through.

Put the fire off, add the chopped parsley and season with salt and pepper to taste.

Serve immediately.
