Patatas Alioli are a typical Spanish dish. They can be served as a tapa or as a side dish to accompany roasts or fish, or… well, that will be my next post, so stay tuned! I think they are delicious. Like Italian food, Spanish cuisine is all about simple, hearty and high quality ingredients. That’s why I recommend that you make your own aioli for this recipe (you can find my tutorial on how to make Home-made Aioli here). It will only take you 10 minutes and it can be done while the potatoes cook and cool, but the final dish will taste so much better than if you used aioli from a jar. Also, I suggest you boil the potatoes with their skin on and peel them after they are cooked: I find that they taste better and do not absorb much water. Buen provecho!

Patatas Alioli - a delicious Spanish tapa or side dish, perfect for both meat and fish!
Ingredients
- 4 medium potatoes boiled THEN peeled and cooled
- 6-8 tbsp aioli
- 2 tbsp parsley chopped
- Salt

Manu, this potato dish looks amazing! I love potatoes in any form but covered in homemade aioli?! Be still my grumbling stomach! This would be perfect to eat over the summer as a side (or on nights where I’m home alone, my main meal).
