As you know, I have always had a big connection with France. My parents have always loved the country, especially Paris, so we visited at least once a year while I was growing up. Luckily, France is quite close to Milan, so the trips were easy. That said, I have always enjoyed French food… I love all of it. So, today I want to share with you the recipe for Cherry Financiers. But what is a financier? It is a small, light and moist cake, similar to sponge cake. It usually contains almond flour and its distinctive feature is beurre noisette, aka brown butter, that accentuates the cakes’ nutty flavour. Financiers are baked in molds, usually small rectangular loaves similar in size to petits fours. I got mine from France, but they are easily available online: Mini Financiers Silicone Mold. The name financier is said to derive from its traditional rectangular shape, which resembles a bar of gold. This version includes fresh cherries and I personally loved it! Enjoy!
Cherry Financiers
Cherry Financiers - small, light and moist French cakes made with almond flour and beurre noisette.
Ingredients
- 200 gms – 1 ½ cups icing sugar
- 100 gms – ½ cup butter
- 6 egg whites
- 75 gms – ½ cup almond meal
- 75 gms – ½ cup flour
- ½ tsp baking powder
- 1 tsp vanilla extract
- 500 gms – 1.1 lbs. cherries pitted and chopped
- Almond slivers
Instructions

Remove the saucepan from the fire and put it in cold water to cool it down fast.

In a bowl, sift together the flour, almond meal, baking powder and icing sugar. Mix well.

Slowly add the egg whites and stir well.

Add the melted butter and vanilla extract and mix well.

Cover the bowl with cling wrap and refrigerate it for at least 6 hours.

Divide the batter into the financiers molds (fill them up to 3/4).

Decorate with almond slivers and serve.
