This recipe will help you to spice up your salad with a low fat and delicious dressing. Yes, you read that right… low fat and delicious were used in the same sentence! It is low fat as it is a yoghurt based dressing and it is delicious thanks to the addition of saffron and curry powder. Try it the next time you make a salad!
Recipe adapted from the book “Zafferano, Piacere e Benessere – 3”
Ingredients:
200 ml yoghurt
½ sachet of saffron powder or 1 pinch of saffron threads
1 pinch curry powder
1 tbsp extra virgin olive oil
Salt
Salad
Melt the saffron powder or threads in 1 tbsp of warm extra virgin olive oil. Set aside to release its colour and cool down.
In a bowl, mix yoghurt, curry powder, salt, extra virgin olive oil and saffron until well combined.
Serve with your favourite salad.






















I got saffron for Christmas (yes, last year) and STILL have not used it all… This dressing seems like a great way to let the flavor of the saffron shine!
How did I miss this? Yogurt and saffron. I love adding yogurt dressing to my salad but never thought of saffron. Now I will.

HI Sandra… I have never stored this dressing… it just takes 5 minutes to make, so I usually whip it up on the spot and we finish it all… it’s too good. 😉 But I would guess it should be fine for 2 or 3 days in the fridge… in the end it is just yoghurt, oil and spices. 🙂
