Due to my gallbladder issues, I have been on a low fat (almost fat-free) diet for over 2 months. Finding appetising recipes that have no more than 2 grams (0.07 oz!!) of fat per serving was not easy, but these Tuna Dill Salad Pita Pockets fit the bill if made with fat-free or very low fat ingredients. The key when you cannot eat “decadent comfort food” is to use herbs, tart and refreshing ingredients and always add a little crunch, to stimulate your taste buds and your senses. It does help, trust me! The filling of these pita pockets is amazing: I love dill, but I had never tried it with tuna and I was very pleasantly surprised by the combination. I also loved the crunch and spiciness the radishes added to it and the freshness the cucumber brings in. This recipe is an absolute keeper, even if you don’t need to eat low fat food! It is a fantastic lunch and summer meal idea! Enjoy!

- 170 gms – ¾ cup tuna in springwater drained
- 1/3 cup mayo I used fat free
- ½ Lebanese cucumber chopped
- 1 tbsp fresh dill chopped
- 2 radishes sliced
- 1 cup lettuce shredded
