Coco Loco is a creamy Caribbean cocktail made with rum, vodka, tequila, coconut cream, and fresh lime juice. This easy recipe blends into a smooth tropical drink in minutes.

After a few weeks of recovering from the flu and putting up with the cold, grey days here in Sydney, I started longing for a bit of sunshine. Travelling to the Caribbean wasn’t an option, but a glass of homemade Coco Loco turned out to be the perfect escape.

What is Coco Loco?

Coco Loco is a Caribbean cocktail often served in a freshly opened coconut along the beaches of the Dominican Republic and parts of coastal Mexico. The name translates to “Crazy Coconut,” a reference to both its coconut base and its generous mix of spirits.

The drink blends rum, vodka, and tequila with coconut cream, coconut water, and fresh lime juice. Some variations include a splash of pineapple juice, but the classic version focuses on coconut and citrus for balance. Even with three spirits, it tastes smooth and surprisingly easy to drink.

Key Ingredients for Coco Loco

Rum

A classic base in Caribbean cocktails, rum brings warmth and depth that balance the coconut’s creaminess. White rum gives a lighter taste, while dark rum adds a richer flavour with a hint of sweetness.

Coconut Cream

This gives the drink its smooth, creamy body. I prefer using unsweetened coconut cream, as it keeps the flavour natural and prevents the cocktail from being too sweet.

Lime Juice

Freshly squeezed lime juice adds brightness and balance to the drink. Bottled lime juice can be used if fresh limes are not available, but fresh juice gives a cleaner flavour and keeps the cocktail light and refreshing.

How to Make Coco Loco

Step 1: Put all the ingredients, except for the ice and lime slices, in a blender, and blend until smooth.

Smooth coconut mixture blended until creamy.

Step 2: Fill your glasses halfway with ice.

Clear glass filled halfway with ice cubes.

Step 3: Pour the Coco Loco into the prepared glasses.

Step 4: Garnish with a lime slice and serve immediately.

The best tequila for Coco Loco depends on your taste. If you prefer a clean and refreshing flavour, white tequila (Blanco tequila) works well. For a smoother drink with gentle depth, reposado tequila is another excellent option.

Swap Coconut Cream with Coconut Milk – If you prefer something lighter, use canned coconut milk instead. The flavour will still be delicious, just a bit less rich.

Add Pineapple Juice for a Fruity Twist – A splash of pineapple juice gives the cocktail a tangy sweetness and makes it even more refreshing — a fun tropical drink recipe variation.

Experiment with Garnish Ideas – Change up the garnish to make your Coco Loco stand out. Try lime slices, pineapple wedges, toasted coconut, or a bit of mint for extra freshness.

Storage and Shelf Life

Coco Loco is best enjoyed fresh, but you can store it for later if needed. Pour any leftover mixture (without ice) into a sealed glass bottle or jar and refrigerate for up to 24 hours. Shake well before serving, as the coconut cream can separate slightly.

Freezing isn’t recommended because the coconut cream may curdle once thawed. If you’d like to prepare it ahead, blend everything except the ice, chill it, then pour it over fresh ice before serving.

Ingredients

  • 60 ml – ¼ cup rum
  • 60 ml – ¼ cup vodka
  • 60 ml – ¼ cup tequila
  • 475 ml – 2 cups coconut cream
  • 235 ml – 1 cup coconut water
  • Juice of 3 limes
  • Ice cubes – as needed
  • Lime slices – to serve

Instructions

Notes

If you like your drinks to be sweet, you can add 1.5 teaspoons of caster sugar per glass.
