PORK FILLET WITH A HONEY & MUSTARD GLAZE AND FRIED ARTICHOKES

Pork Fillet with a honey and mustard glaze

This is one of those recipes that I have been making for such a long time that I do not even remember where I got it from!  It is very simple, yet delicious.  The pork is tender, juicy, sweet and tangy.  I love to serve it with fried artichokes, the way my mum makes them.  I like the contrast between the sweetish flavours of the pork and the slightly bitter artichokes.  Tender meat and the crunchy veggies… could there be anything better?  The whole thing makes a perfect midweek dinner.  You could add a nice green salad to cleanse your palate.  Enjoy!

 

Ingredients (for 4 persons):
500 gms – 1.1 lbs pork fillet

For the marinade
3 tbsp honey
4 tbsp grain mustard
1 tsp rosemary
1 tbsp extra virgin olive oil
1 tbsp mustard seeds
Salt & Pepper

For the fried artichokes
2 artichokes
Flour
Salt
Vegetable oil for frying

Mix all the marinade ingredients together.  Reserve 2 tbsp of the marinade and put all the rest in a ziploc bag with the pork fillet.  Marinate the pork for a couple of hours.

Bake in a preheated fan forced oven at 180°C for about 25 to 35 minutes, depending on the thickness of the pork fillet.   After the first 15 minutes, baste the pork with the 2 tbsp marinade that you had kept aside.

In the meantime, clean and slice your artichokes into 1 cm thick slices.  Coat them in flour and shallow fry them in hot vegetable oil.  Season with some salt.

Slice the pork and serve it with the fried artichokes and the pork juices.

    The pork looks deeeelicious! This is my favorite cut of pork and I love your marinade. I’ve never fried artichokes, but it sure looks easy. People eat goooood at your table. 🙂

    What a beautiful blend of flavors ! And you have paired it so well with fried artichokes. It’s a pity that I don’t cook pork,mainly because TH is allergic to it.
