Today I will share with you the perfect recipe for a quick, healthy, and satisfying sweet treat: Caramelised Pineapple.
It is a dessert with exotic flavours and I like to serve it with coconut yogurt to keep it low fodmap (dairy-free and vegan)! The coconut yogurt enhances the tropical feel of it. In fact, if you close your eyes, you could even imagine yourself on a beach enjoying a Mojito (that’s the mint!).
Caramelised pineapple was in fact on the menu of all the hotels we visited in French Polynesia, both in the Society Islands and the Tuamotu Islands. Pineapple, coconut, and vanilla are all staples of those beautiful islands. I guess that’s why I always think of turquoise waters and white sandy beaches while I eat it.
If you prefer, you can serve this Caramelised Pineapple with vanilla ice cream instead of coconut yogurt or plain yogurt. It would still taste so good!

Caramelised Pineapple
Ingredients
- 400 gms – 14 oz. fresh pineapple cubed
- 2 tbsp coconut oil
- 1 tbsp brown sugar
- 2 tsp vanilla extract
- 10 mint leaves
- Coconut yogurt or your favourite yogurt or vanilla ice cream to serve
Instructions

Melt the brown sugar with the coconut oil over medium heat.

Add the cubed pineapple and cook for about 5 to 7 minutes, or until soft and caramelised.

Add the vanilla extract, mix and remove from the fire.

Let it cool for a couple of minutes, then add the mint leaves.

Serve warm with coconut yogurt (or your favourite yogurt) or vanilla ice cream.
