It is time again for the “Secret recipe club” reveal! I am sure you all know what the club is about, but for the few of you who still don’t know about it, here goes a brief explanation. It is a great concept… each month you are assigned a participating food blogger to make a recipe from and in turn someone else will be assigned your blog. All you have to do is choose a recipe, make it and blog about it on the specified date. The only rule is to keep it a secret! The blog I got assigned this month is Jamie’s Our Eating Habits. Jamie has lots of recipes on her blog and the list of possible goodies to try was so long! In the end I chose these Flourless Peanut Butter Cookies because my kids love cookies and they can never have enough. Besides, I already had all the ingredients in my pantry and I was quite curious to see how they would turn out without using flour. I was so pleasantly surprised! These cookies are very easy and quick to make and they are exactly like peanut butter cookies should be: tasty, nutty, tender and crunchy all at the same time. And, above all, they are a perfect balance of sweet and salty which I love in peanut butter cookies. Enjoy and thank you Jamie for a great recipe!
Flourless Peanut Butter Cookies
Flourless Peanut Butter Cookies - all that peanut butter cookies should be minus the carbs!
Ingredients
- 1 cup creamy peanut butter
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- 1 tsp baking soda
- ½ tsp vanilla extract
- ½ tsp cinnamon
Instructions

Cream together the peanut butter and both sugars.

Add the remaining ingredients and mix until combined.

Roll about ¾ of a tablespoon of dough into balls and place them on a baking tray lined with baking paper.

Bake for 10 minutes in a pre-heated oven at 175°C – 350°F.

When ready, let them cool down on the tray for 5 minutes and then transfer to a wire rack to cool down completely.

I’ve never made peanut butter cookies (or any kind of cookie for that matter) without flour. These look great though!

Hmm, I’m confused, I used peanut butter from the powder but once it’s mixed it should be the same as jar butter right?. I mixed it with almond milk into a fairly dry butter, then mixed in the cup of mixed sugars and one egg, soda, vanilla and cinnamon-
Dough came out like pancake batter! Now why is that? I was really annoyed. What did I miss in your recipe?
To remedy, I mixed in 2 cups of gluten free flour. So at least they’re still ” wheat flourless”. Because the powder has no oil in it you have to oil the fork to make the indents in the cookie or the fork will stick.
I’ve tried many recipes off the web and many times the result is not right so I guess I’m not that impressed with this one since I did in the end have to add flour.
