After sharing my Cinco de Mayo Recipe Round-Up, I am back with another delicious latina recipe: Low Fodmap Pineapple Mint Agua Fresca.
This is a delicious and very refreshing tropical drink that will keep the whole family pleasantly hydrated.
It’s also very easy to make… all you need to do is put all the ingredients in the blender and blend until smooth. The only thing is to remember to freeze the pineapple cubes in advance. I usually cut out a full pineapple, portion it and freeze it in freezer bags. This way, I always have some frozen pineapple handy.
If you follow the Low Fodmap diet, one serving of this is also Low Fodmap.

Low Fodmap Pineapple Mint Agua Fresca
Ingredients
- 300 gms – 10 oz. fresh pineapple in cubes to freeze the night before
- 500 ml – 2 cups water
- Juice of one lime
- A small handful of fresh mint leaves
- 2 or 3 tbsp granulated sugar
- Ice cubes
Instructions

Cube and freeze the pineapple the day before.

The following day, put the frozen pineapple, water, mint, lime juice, 2 ice cubes, and sugar in a blender.

Blend until smooth.

Add two (or more) ice cubes to each glass and divide the pineapple mint agua fresca over the three glasses. Serve immediately with a straw.
