Today’s recipe is one of my favourite mid week dinner ideas. My mum would often make pan fried pork cutlets and she would always serve them with hot fries. It is a hearty dish that I have always enjoyed. It’s easy and quick to make and it tastes delicious thanks to the abundance of herbs and garlic. Make sure you also have plenty of bread to soak up all that deliciously aromatic wine sauce! It is a crowd pleaser and Italian food at its best due to its simple and clear flavours. Enjoy!

Pan fried Pork Loin Cutlets
A delicious recipe for a quick dinner idea: Pan fried Pork Loin Cutlets!

Ingredients
- 2 pork loin cutlets
- 4 tbsp extra virgin olive oil
- 2 garlic cloves crushed
- 1 bay leaf
- 1 rosemary sprig
- 2 sage leaves
- ¼ beef bouillon cube
- 80 ml – 1/3 cup white wine + water
- Salt to taste
Instructions

Put the garlic cloves, herbs and extra virgin olive oil in a frying pan and sauté for 1 minute.

Add the pork loin cutlets, increase the flame to medium high, and brown the meat on both sides.

Add the white wine and let the alcohol evaporate.

Add 3 tbsp of water and the beef bouillon cube. Stir to melt it.

Reduce the heat to medium-low, cover with a lid and cook until the meat is cooked through (check that the juices run clear – you may need to add a little extra water).

Season with salt, if required, and serve hot.
