It’s the end of summer here. The kids are back in school (sigh) and we are enjoying the last days of warm weather. Wait, what? I think we will still have quite a few warm days around here, but let’s say that, “officially” summer is almost over. So, I am sharing one of those recipes that you may want to keep handy for the warmer months, pool parties and barbecues. It’s quick to make, it looks beautiful and it’s yum and refreshing. After all, it’s like a miniature salad on a toothpick! I love Halloumi cheese… it’s quite salty, so be careful when adding salt to your vinaigrette, and when pan fried it gets a delicious crust on the top! Serve these as an aperitivo or appetiser with a chilled glass of white wine! Enjoy!
Cherry Tomato and Halloumi Bites
Cherry Tomato and Halloumi Bites - a great appetiser idea for the warmer months!
Ingredients
Vinaigrette
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- ¾ tbsp honey
- ¾ tsp oregano
- 1 pinch salt
Bites
- Cherry tomatoes washed and halved
- Halloumi cheese
- Extra virgin olive oil
- Basil leaves
Instructions

Put the halved tomatoes in a bowl and toss them with the vinaigrette.

Put half a tomato on a square of the pan fried Halloumi cheese. Top with a basil leaf and skewer everything together using a toothpick. Do this for all the remaining tomatoes and Halloumi cheese squares.

Serve immediately.

Halloumi is my weakness.. there’s something about it’s salty deep fried taste that gets me every time! I can imagine how delicious these little appetizers must have been. I have to try the recipe!
