Mini Vegemite and Cheese Sandwiches turn snack time into fun time. Soft bread, creamy cheese, and a thin layer of Vegemite make a gentle, savoury treat kids love to help prepare.

These Mini Vegemite and Cheese Sandwiches were part of my menu for Foodbuzz 24×24: Come Have Some Aussie Tucker, Mate!, a collection celebrating classic Australian bites, and they were a success with everyone, especially my two-year-old, who couldn’t stop eating them.

They’re small, simple, and perfect for any casual get-together or school lunchbox.

What is a Vegemite Sandwich?

A Vegemite sandwich is an Australian favourite made by spreading Vegemite on buttered bread. Vegemite is a dark, salty yeast extract spread known for its strong savoury flavour.

It’s similar to Marmite, the British version made the same way but a little sweeter and less intense.

The classic Vegemite sandwich uses soft white bread with a thin layer of butter to soften the saltiness. Some people add cheese, avocado, or tomato, but the original stays simple with bread, butter, and a light spread of Vegemite.

What Makes These Mini Sandwiches So Enjoyable

  • Works perfectly for picnics, parties, or lunchboxes when you want something easy to share.
  • Offers a quick option for busy mornings when something homemade is still preferred.
  • The combination of butter, cheese, and bread creates a melt-in-the-mouth texture.

Key Ingredients for Mini Vegemite and Cheese Sandwiches

Ingredients for Vegemite sandwich including white bread, butter, cheese, and a jar of Vegemite.

Butter

Softened butter creates a smooth layer that helps the Vegemite spread evenly. It also softens the strong flavour and keeps the bread from drying out.

Vegemite

The key ingredient that gives these sandwiches their unmistakable savoury flavour. Salty, umami, and deeply malty, Vegemite is strong, so a thin layer is all you need. It pairs especially well with the creamy cheese and soft bread.

Cheese

Use cheddar or tasty cheese, sliced thinly so it complements rather than overwhelms the Vegemite. A slightly sharp cheese adds balance, while mild varieties work well for younger palates.

Find the complete list with measurements in the recipe card below.

How to Make Mini Vegemite and Cheese Sandwiches

Step 1: Spread softened butter over the bread slices.

Step 2: Spread a small amount of Vegemite (it has a strong taste) on half of the slices, then top each one with a slice of cheese.

Step 3: Assemble the sandwiches and serve.

Frequently Asked Questions

How much Vegemite should I use?

Spread a thin, even layer over the buttered bread. Use a small amount so the taste stays pleasant and balanced with the cheese.

Can I make these sandwiches ahead of time?

Yes. Prepare them a few hours before serving and keep them in an airtight container in the refrigerator. Place a sheet of baking paper between layers to help the bread stay soft.

What type of cheese works best?

Cheddar or tasty cheese gives a good mix of sharpness and creaminess. You can also use a milder cheese if you prefer a softer taste.

Can I toast the sandwiches?

Yes. Toast them in a sandwich press or skillet for 1-2 minutes until the cheese melts and the bread turns lightly crisp. Serve warm for a richer taste.

Extra Help from the Kitchen

Start with Fresh Bread – Fresh, soft bread makes a big difference. It holds together when cut into small pieces and keeps the sandwiches light instead of dense or dry.

Chill Before Cutting – After assembling, place the sandwiches in the fridge for about 10 minutes. This helps the butter firm up slightly, so the layers stay neat and don’t slide when sliced.

Cut Just Before Serving – Slice them close to serving time to keep the bread edges soft and prevent any drying out. This also keeps the filling at its best texture.

Trim After Assembly – Always trim the crusts after putting the sandwiches together. Doing it beforehand can make the bread harder to align and leaves uneven edges.

Use a Clean, Sharp Knife – A thin, sharp blade cuts through the bread smoothly without squashing it. Wiping the knife between cuts keeps the slices tidy and professional-looking.

Variations and Twists

Add Ham and Cheese – Layer a thin slice of ham between the Vegemite and cheese for a saltier, more savoury flavour. It turns these sandwiches into a quick snack for grown-ups too.

Swap for Wholemeal Bread – Replace white bread with wholemeal to add a nutty flavour and a slightly firmer texture. It’s a good option if you want a bit more bite.

Toast the Sandwiches – Lightly toast them in a sandwich press or skillet until the cheese melts. The heat softens the Vegemite and gives a crisp, golden edge.

Cut into Kid-Friendly Shapes – Use cookie cutters to make fun shapes for parties or lunchboxes. Circles, stars, or hearts work well and are easy for little hands to hold.

Use Cheese Spread Filling – Replace sliced cheese with a mild cheese spread for an even creamier texture. It spreads easily and blends smoothly with the butter and Vegemite.

Storage and Shelf Life

Store Vegemite sandwich leftovers in an airtight container in the refrigerator for up to 1 day. If stacking them, place a sheet of baking paper between each layer to stop the bread from sticking or becoming damp. Remove from the fridge about 15 minutes before serving so the bread softens slightly.

Toasted sandwiches can be gently reheated in a sandwich press or skillet for 1-2 minutes until the cheese melts again.
