Today I want to share with you the recipe for a great appetiser: mini savoury madeleines made with walnuts and olives. I saw these in an Italian food magazine and I just HAD to make them. Actually, I made these for Christmas and served them as one of our appetisers, with blue cheese and honey. They were a big hit. My kids LOVED them and they disappeared really fast. The good thing is, they are really easy to make and a great “bread substitute” for when you want to serve something a bit more sophisticated. The combination of walnuts, honey and blue cheese is always a winner and one of my all time favourites. I made these madeleines in a mini madeleine tin, but you can use a regular one too. I just like the idea of serving small finger food, especially for parties, buffets and special occasions. Enjoy and bon appétit!
Olive and Walnut Mini Madeleines
Olive and Walnut Mini Madeleines - a sophisticated appetiser to serve with blue cheese and honey!
Ingredients
Madeleines
- 120 gms – 1 cup flour
- 80 gms – 2.8 oz. walnuts
- 10 black olives pitted and chopped
- 2 eggs
- ½ tsp baking powder
- 80 gms – 1/3 cup butter melted
- Pepper
- ½ tbsp fresh thyme chopped
To Serve
- Blue cheese like Gorgonzola piccante or Stilton
- Honey better if Chestnut honey or a “bitter” honey
Instructions

Blend the walnuts in a food processor until they become a fine powder.

Sift the flour and baking powder and put it into a big bowl.

Add the walnut powder, eggs and melted butter.

Add the chopped olives, thyme and pepper to taste.

Mix until well combined.

Bake in a pre-heated oven at 220°C – 430°F for the first 5 minutes, then reduce the heat to 180°C – 355°F and cook for another 5 minutes, or until cooked through.

When ready, let them cool down on a wire rack.

Serve with the blue cheese and honey.
