If you follow Manu’s Menu, you will know how much I love blue cheese. It is my absolute favourite cheese! I love how pungent it is and I use it a lot in my cooking. I made these Walnut Roquefort Sables for Christmas and even my husband, who on the contrary is not a fan of blue cheese, loved them. So much so that he asked me to make another batch! The cheese flavour is subtle and the cookies are buttery and crunchy. I love the extra texture given by the walnuts on the top. They make for a delicious and very classy appetiser and go really well with a glass of white wine. Enjoy!

Walnut Roquefort Sables
Walnut Roquefort Sables - a mouth-watering appetiser or snack idea.
Ingredients
- 150 gms – 1 cup plain flour
- 80 gms – 1/3 cup butter
- ½ tsp ground pepper
- 1 tbsp durum wheat flour
- 150 gms – 5 oz. Roquefort crumbled
- Walnuts crushed
Instructions

Mix all the ingredients together, apart from the walnuts and knead into a dough.

Cut the log into 80 mm – ⅓″ slices. Top each cookie with some crushed walnuts (press them down slightly so they don’t fall off).

Bake the cookies on a baking sheet lined with baking paper at 180°C – 355°F for 10-15 minutes, or until just golden around the edges.

When cooked, let them cool down on the baking sheet for 5 minutes, then transfer them to a wire rack to cool down completely.

Store them in an air-tight container for up to 3 days.
