After making my Chocolate Hazelnut Milk, I had some hazelnut pulp left and you know I love to re-use leftovers, don’t you? I dug and dug and I found a great recipe for it: Vegan Chocolate Hazelnut Truffles.
I love how easy it is to make… you just blend everything together in a mixer and you are basically done.
This is a great vegan and gluten-free option, one that tastes amazing… which means, you don’t need to be vegan or gluten intolerant to enjoy it too.
It is a guilt-free recipe for everyone who wants a healthy sweet treat!

Vegan Chocolate Hazelnut Truffles
Ingredients
- 225 gms – 1 cup hazelnut pulp
- 20 gms – ¼ cup cocoa powder
- 160 gms – 1 cup dates
- 1 tbsp maple syrup
- 50 gms – ½ cup hazelnuts chopped
- ½ tsp vanilla extract
Instructions

Blend all the ingredients in a food processor, except for the hazelnuts.

Place the dough in a bowl. Add the chopped hazelnuts and stir with a spoon.

With slightly wet hands, make the balls.

Keep the truffles in a sealed container in the fridge.
Recipe Notes
If you don’t have plant milk pulp, use 50 grams (1/3 cup) hazelnuts instead of the hazelnut pulp and add more maple syrup.
