If you follow me on Facebook, you will know that this year we hosted a little New Year’s Eve party at our place. We had a Spanish theme. We started off with some Pineapple Mojitos and then we had Sangria and a few tapas: Stuffed Mushrooms, Smoked Salmon, Chorizo en Salsa, Manchego, Jamon Serrano, salami style Chorizo, Oysters, Gambas al Ajillo and one of my friends brought Potato Tortilla, Mushrooms Escabeche and Salt Cod Brandade. As main dish we had a Mixed Paella and then 2 desserts: Chocolate Mousse and Crema Catalana. I know, it sounds like A LOT of food and… it was! We had a blast and it was a delicious way to celebrate the new year. I am going to share a few new recipes I tried for the occasion… the ones we liked the most. Today, I will start with this tasty tapa, a very easy one to make and a crowd pleaser: Chorizo en Salsa. Buen Provecho!
Chorizo en Salsa
Chorizo en Salsa - the recipe for an easy and delicious Spanish tapa!
- 250 gms – 9 oz.chorizo sausages thickly sliced
- 400 gms – 2 cups diced tomatoes
- ½ onion chopped
- 2 tbsp extra virgin olive oil
- Salt to taste
Sauté the sliced chorizo on a high flame with the extra virgin olive oil. When browned on all sides, remove it with a slotted spoon and keep it aside.
Sauté the chopped onions in the same oil. When translucent, add the tomatoes and salt and mix well.
Add the chorizo back and cook it on a medium flame for 10 or 15 minutes, or until the sauce has thickened.
