Today I am going to share the recipe for a delicious sandwich: Lemon Chicken Wrap with Aioli. This recipe is an ode to the Mediterranean: the chicken marinade’s flavours are of clear Greek-Turk inspiration, while the Aioli component brings in the south of France and Spain and the arugula (also known as rocket) and tomatoes make up the Italian addition to the dish. This is my kind of sandwich, one I am always happy to eat. I love the zesty lemon flavour of the chicken and what I like even more is that the chicken remains juicy and moist. It goes really well with the chicken and the greens in this wrap, it kind of brings all the different flavours together and it also adds a needed touch of creaminess. Enjoy!

Lemon Chicken Wrap with Aioli - the recipe for a delicious sandwich which is an ode to the Mediterranean region.
Ingredients
Marinade
- 500 gms – 1 lb. chicken tenders cubed
- 2 tbsp extra virgin olive oil
- 2 garlic cloves smashed
- Zest of 1 lemon grated
- 1 tbsp lemon juice
- 1 tsp salt
- ½ tsp oregano
- ½ tsp cumin powder
- ¼ tsp coriander powder
Wraps
- 4 wraps
- Arugula/Rocket
- Tomatoes sliced

Instructions

Mix all the ingredients of the marinade together.

Add the chicken, mix well and marinate for 30 minutes.

When ready to grill, skewer the chicken and grill it for about 6-8 minutes, turning occasionally so that the chicken gets a bit charred on all sides, or until cooked through.

Serve immediately.
