These Low Fodmap Sunshine Popsicles are perfect for those of you enjoying the glorious summer weather in the Northern Hemisphere! Lucky you!!!
These popsicles are delightfully refreshing and healthy as they are made with fresh fruits and vegetables. I love the taste of carrot and orange juice together! So yummy, sweet and tangy at the same time! And look at that colour, just like the summer sun!
These Low Fodmap Sunshine Popsicles are low fodmap, so they are also great for those with a delicate tummy.

Low Fodmap Sunshine Popsicles
Ingredients
- 480 gms (about 4 large carrots)
- 3 large oranges
- 1 tsp orange zest
- 2 tbsp icing sugar
Instructions

Zest one orange. Juice the oranges and grate the carrots.

Place the grated carrots into a clean cloth, wrap tightly, and then squeeze the juice out of the carrots and into a bowl.

Combine the carrot juice, orange juice, orange zest, and icing sugar in a bowl.

Filter the mixture and pour it into the popsicle moulds and place in the freezer to freeze overnight. If you are adding wooden sticks to your ice blocks (instead of using the popsicle holder tops), then add them about 2 hours after they go into the freezer. This way the liquid will be icy enough to keep them upright.

Remove the popsicles from the moulds and enjoy!
