You probably don’t know this, but my family has been hit by a brutal bout of flu… the kind that gives you 104F fever. It is so irritating as it is summer here and it’s really not the time you would want to catch the flu (if ever there is a time!). Also, both my husband and youngest daughter celebrated their respective birthdays in bed, which is the WORST. We had organised a little party for our 4 year old princess and we had to postpone it, which made her quite sad too. Anyhow, I thought this was a good time to share with you a somewhat comforting recipe… but before I do that, I need to share the recipe for the spice mix that is essential to that recipe: chai masala. Chai masala is a mix of spices used in India to make chai (tea). I think every family in India has their own mix, some may use more or less of a specific spice… this is my family’s favourite and it can be used to make chai (tea) and all kinds of baked goods! Enjoy!
Chai Masala
Chai Masala - a blend of spices for an aromatic Indian tea.
Ingredients
- 10 gms – 2 tsp pepper powder
- 10 gms – 2 tsp ginger powder
- 7 gms – 1.5 tsp cardamom powder
- 7 gms – 1.5 tsp cinnamon powder
- 0.5 gm – ¼ tsp clove powder
- 0.5 gm – ¼ tsp nutmeg powder
