As you may know, I have recently discovered that I am lactose intolerant. That means that I have to also find new ways to satisfy my sweet tooth, so I am always on the lookout for recipes that do not include dairy. Good vegan recipes, like this Vegan Apple Spice Cake, are always great, as they do not contain any dairy (or eggs for that matter).
This cake is healthy, yet it tastes amazing. It is very moist thanks to the apples in the batter and it is quite low in fat as well. To me, it ticks all the boxes. And you don’t have to be vegan to make a healthier dessert!!
I have already made this Vegan Apple Spice Cake a few times and it always comes out perfect. If you want, you could whip up some frosting to go with it, but I like mine plain.
Serve it with a nice cup of coffee or tea and enjoy!
Vegan Apple Spice Cake
Ingredients
- 190 gms – 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp cloves
- ½ tsp nutmeg
- ½ tsp allspice
- ½ tsp salt
- 150 gms – ¾ cup granulated sugar
- 85 gms – 6 tbsp vegetable oil
- 1 tbsp vinegar
- 1 tsp vanilla extract
- 240 ml – 1 cup water
- 1 cup grated apple about 1 ½ – 2 medium apples
- 60 gms – ½ cup chopped walnuts
Instructions

Grease and flour a 20x20 cm (8x8 inch) pan, or line it with baking paper. Keep aside.

In a mixing bowl, stir together all the dry ingredients (flour, baking soda, spices, salt, and sugar). With your hands, gently squeeze out about half of the liquid from the grated. Add the grated apple and the remaining cake ingredients and stir until combined. Transfer the batter into the pan.

Bake in a pre-heated oven at 180°C – 350°F for 35-40 minutes, or until an inserted toothpick comes out clean.
Recipe Notes
You do NOT need to peel the apples before grating them (although you will want to remove the core).
