This week Manu’s Menu will feature 3 Spanish recipes! I love Spain and Spanish food is among my all time favourite! It is also very close to Italian, and even more so to Sicilian, food, so I guess it would be very hard for me not to love it! Let’s start with a very simple recipe: Pa amb Tomaquet. Pa Amb Tomaquet, also known as pan con tomate, is a a classic of Catalan cuisine. It is eaten throughout the day in Catalonia: for breakfast, as a tapa, for merienda, or any other time! When I was in my 20’s I spent a few weeks of my summer holidays in a small village in the Spanish (I should say Catalan) Pyrenees to work in a National Park. I was part of a group of young Europeans working for an environmentalist association to clean up the area. It was an amazing experience and our group leaders and guides were all young local people. In the evenings, they would often make dinner for us and the dish I remember eating most regularly was Pa amb tomàquet! I learnt how to make it from the locals and I will never forget it! Like with all simple dishes, the key in making a good Pa amb tomàquet is the quality of your ingredients. You can serve this plain or topped with some Jamón Serrano or Ibérico! It is AMAZING! Pa Amb Tomaquet
Pa Amb Tomaquet - a very easy yet delicious dish from Catalonia. Perfect on its own or topped with jamon!
Ingredients
- Stale crusty bread baguette or ciabatta work fine, sliced
- Tomatoes halved
- Extra Virgin Olive Oil
- Sea salt
- Garlic
Instructions

Lightly toast the bread on the grill or in the broiler (optional).

Slice a clove of garlic in half and rub it over the surface of the bread.

Slice a tomato in half and rub it liberally across the bread, shredding the pulp in the process, until the bread is saturated enough.

Serve plain or topped with Jamon Serrano or Ibérico.
