Today I am back with a delicious recipe for a Low Fodmap Smoky Red Pepper Dressing that is perfect to jazz up your salads.
Actually, this dressing is quite versatile. In fact, I also like to serve it with pan-fried steak, chicken, or my Low Fodmap Sausage Rolls.
I really like the smoky flavour the smoked paprika gives to this dressing. And I also love the fact that this dressing’s flavour is the perfect balance between sweet and sour.
This Low Fodmap Smoky Red Pepper Dressing is low fodmap, however, if you do not need to follow the low fodmap diet, you can substitute the garlic-infused olive oil with some normal extra virgin olive oil and ½ a clove of garlic and the xanthan gum with some breadcrumbs.

Low Fodmap Smoky Red Pepper Dressing
Ingredients
- 2 red peppers
- 4 tbsp extra virgin olive oil
- 1 tbsp garlic-infused olive oil
- 2 tbsp rice vinegar
- 3 tsp maple syrup
- 1 ½ tsp smoked paprika
- 1 pinch xanthan gum to thicken
- Salt to taste
Instructions

Spray the red pepper with some olive oil and bake in a pre-heated oven at 180°C – 355°F, until tender. Peel and keep aside to cool down.

Mix together the roasted red pepper, extra virgin olive oil, garlic-infused olive oil, rice vinegar, maple syrup, smoked paprika, xanthan gum, and salt.

Blend until smooth with a stick hand blender and serve.
