Today the Sunday Supper group is inviting everyone to a big Virtual Picnic! It is summer in the Northern hemisphere and a picnic is in order. Even for us down here, stuck in the coldest months of the year, picnic food is fun and always great to pin and bookmark. I love “dreaming” of summer time and plan all the outdoorsey things we can do once the chill is over. And picnics are high on our family priority list. So, I am going to go through all the Sunday Supper delicious suggestions and save them for those special days.
What am I contributing to this fun event? A sandwich. Though it is not your everyday sandwich, as I am sure you would have guessed from the pictures. Panino con la Salamella is a typical sandwich from Northern Italy, made with pork sausage (salamella), sweet peppers, onions and a sauce. Also, the bread used is a francesino (literally “little French”), a bread roll from Milan. You can substitute it with a baguette as the dough is very similar. There are many variations, off course, and some modern twists also add cheese (I have seen some with brie) and go all crazy with sauces. I wanted to stay as traditional as possible, as this sandwich is an iconic street food item in Milan, the city I was born in (and that is why I am also tagging this recipe under my Regional Italian food series). It is typically sold by kiosks and food trucks, outside sports or concert venues… or even at trafficated street crossings, where people are bound to pass by. Eating one of these sandwiches is a must when going to watch a soccer match, or as a midnight snack when coming out from one of the many clubs in the city. It is a hearty, no nonsense (and not diet friendly) food. Comfort food at its best. To me, there is no other sandwich that can compare.
Because it is such an iconic dish, I wanted to get it absolutely right. So, I did some research (aka, I asked my friends from Milan via Facebook) to see what they like in their Salamella sandwich. I got a few variations, but everyone agreed that a classic version HAD to include peppers and onions. As for the sauce, 50% preferred mayo and the other 50% preferred Dijon mustard… so you can choose, according to your taste buds.
I do not have access to salamella here in Australia… but a little while ago I made Verzini sausages, which are exactly the same thing, but smaller (a verzino is about 10 cm – 4 inches long, while a salamella is about 15 to 20 cm – 6 to 7.5 inches long)… So, I used 2 verzini per sandwich and it worked out great! This sandwich is amazing. I strongly recommend you try it. I cooked everything in a pan on the stove, as it’s winter here, but this is the perfect dish to make on the barbecue! Panino con la Salamella #SundaySupper
The ultimate sandwich: Panino con la Salamella, made with Italian pork sausage, peppers, onions and mayo!
Ingredients
- 2 sweet red peppers chopped
- 2 or 3 onions sliced
- 2 tbsp extra virgin olive oil
- Salt & Pepper
- 1 francesino bread or ½ baguette
- 1 salamella or 2 verzini
- Mayo and/or Dijon mustard
Instructions

Sauté the onions in the extra virgin olive oil until golden brown.

Sauté the peppers in the extra virgin olive oil until golden brown (you can either cook them in a separate pan or add them to the onions half way through).

Slice the salamella in half along the long side and sauté it in the pan where you cooked your vegetables until golden brown on both sides and cooked through.

To assemble your sandwich, cut the bread in half along it longest side and slightly toast it on the pan.

Serve hot.
